Quinoa Peanut Butter Chocolate Chip Cookies

1½ cups quinoa flour
1 teaspoon baking powder
½ teaspoon salt
1 cup creamy peanut butter
¾ cup coconut oil, melted
¾ cup brown sugar
¾ cup granulated sugar
2 eggs
1 tablespoon vanilla extract
1 cup chocolate chips

1 tablespoon vanilla extract
1 cup chocolate chips
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- In a mixing bowl, whisk together the quinoa flour, baking powder and salt. Set aside.
- In a large mixing bowl, cream together peanut butter, coconut oil, brown sugar, granulated sugar, eggs and vanilla extract until smooth and creamy.
- Slowly add the dry ingredients into the wet ingredients and mix until well combined. Fold in the chocolate chips. Cover and chill dough for 30 minutes before baking.
- Drop the dough by heaping tablespoonful onto the prepared baking sheet and bake for 10-12 minutes until lightly golden. Cool before serving.
