Oatmeal Banana Bread

2 cups gluten-free all-purpose flour
1 cup gluten-free oats
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 cup brown sugar
¾ cup vegetable oil
1 teaspoon vanilla extract
3 eggs
3 large ripe bananas, peeled and mashed
½ cup coconut milk

- Preheat oven to 350 degrees F. Spray a loaf pan with nonstick spray and set aside.
- In a mixing bowl, whisk together gluten-free all-purpose flour, Quaker Gluten-Free Quick 1-Minute Oats, baking powder, salt and cinnamon. Set aside.
- In the bowl of a standing mixer using the paddle attachment, beat together the brown sugar, vegetable oil and vanilla extract. Add in the eggs, mashed bananas and coconut milk and mix together until a smooth mixture forms.
- Slowly add the dry ingredients into the wet ingredients, mixing well after each addition.
- Pour the batter into the prepared loaf pan and bake for 65 to 70 minutes until a toothpick inserted into the loaf comes out clean. Cool before slicing.
