Chocolate Chip Apple Bread

Most kids will beg for chocolate at all hours of the day, and this quick bread will satisfy your little one’s cravings. But if chocolate isn’t your thing, substitute dried fruit, raisins or yogurt chips for a lightened loaf.
1 cup almond flour
½ cup coconut flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon nutmeg
1 cup sugar
2 eggs
¼ cup canola oil
¼ cup applesauce
1 teaspoon vanilla extract
2 cups shredded green apples
¾ cup semi-sweet chocolate chips

- Preheat oven to 350 degrees F. Spray an 8 x 4-inch loaf pan with nonstick spray and set aside.
- In a large mixing bowl, whisk together gluten-free all-purpose flour, ground cinnamon, baking powder, salt and nutmeg. Set aside.
- In the bowl of a stand mixer, beat together sugar, eggs, oil, applesauce and vanilla extract. In 3 separate additions, add in the dry ingredients, mixing well after each addition. Add in the shredded apples and mix well.
- Fold in the chocolate chips and then pour the batter into prepared loaf pan. Bake for 55 to 60 minutes until golden and a toothpick inserted into the loaf comes out clean. Cool in pan for 1 hour before removing.
